I love banana bread, but I find baking a bit of a pain. However, I'm good at finding ways of making the pleasurable things in life much simpler. That's why I make my banana bread in the microwave. It's so easy to do, and doesn't even require any flour.
Microwave Banana Bread
- 150g oats*
- 2 ripe mashed bananas
- 2 medium eggs
- 1 tsp baking powder
- 3 tbsp maple syrup*
- Pinch of cinnamon
- Put the oats into a food processor until they are a flour consistency.
- Pop all other ingredients into a large bowl.
- Add in the oat dust and mix until it's a smooth batter.
- Microwave in a suitable container, on high for four minutes.
